1. Make up 1 litre of the culinary cream sauce according to the instructions. Bring to a simmer and then add the white wine.
2. After 3 more minutes add the shrimp and surimi. Once the shrimp are cooked (approx. 2min) add the chopped dill and tarragon.
3. Season with salt, pepper and Tabasco and set aside.
4. Lightly oil a hotel pan and place the haddock pieces on top. Season with salt and pepper and oven bake until cooked.
