Surimi & Salmon Fish Cakes Courtesy Of: Chef Jordana Britt & Chef John Hood Surimi & Salmon Fish Cakes 8 Portions (4oz per cake)

1. Put the diced celery, onions and peppers into a bowl and then flake the surimi and salmon into the bowl.

2. Add all of the remaining ingredients to the bowl and season with salt and pepper.

3. Portion the mixture into eight 4oz balls and shape into round disks, set aside and chill.

4. In a frying pan or flat top cook the cakes until golden brown on each side and thoroughly heated throughout. Serve with your choice of sauce.
