  1. Crack the egg into a bowl and beat with 1/2 cup of water
  2. Slice shallots lengthways , dip into the egg mix and then coat in the flour
  3. Season the steak with salt and pepper and cook to 125 degrees or your preferred doneness
  4. In a small sauce pan heat the 35% cream , then add in the stilton cheese in pieces and allow to reduce to a creamy consistency
  5. Deep fry the shallots to a golden brown
  6. Place steak on a warm plate, pour the cream sauce over the steak and garnish with the crispy shallots
