Reserve ½ cup of dressing for the salad and pour the remaining ½ cup of dressing into a medium bowl with the shrimp. Toss and let sit at room temperature for 30 minutes stirring occasionally. 2. Prepare salad ingredients while the shrimp marinates. 3. Grill the shrimp until just cooked through, about 1 ½ minutes per side. Transfer to a plate and let cool slightly. 4. Put the lettuce, cilantro and sliced fennel into a large bowl. Peel and cut the avocado into ½ inch chunks. 5. Toss with remaining dressing, spoon onto four plates and top with avocado, grapefruit pieces, shrimp and feta.
