Clean and prepare all of the vegetables and set aside. In a large frying pan, add the olive oil and heat over medium high heat. Add the onions and carrots, peppers and cook until they begin to turn translucent. Add the teriyaki chicken and toss well, heating the sauce through and allowing the chicken to come up to a serving temperature – about 2 minutes.  Prepare the noodles according to the instructions and in a shallow bowl. Pour the teriyaki chicken and vegetables over the noodles and top with the sliced green onions.
