Cut the pork loin into 4oz chops, season with sea salt and cracked black pepper, cook on the grill or pan sear untill cooked.

In the pan add the beef demi-glace and whipping cream and reduce until the correct consistency is achieved and add the boursin cheese.

Season to taste and add the butter and the chives.

Arrange the pork on the serving plate and pour the sauce around the pork chops and serve.
