Jalapeno Wood-Grilled Steak w/ a Chimichurri Butter on a Waffled Steam Bun Jalapeno Wood-Grilled Steak w/ a Chimichurri Butter on a Waffled Steam Bun 8 servings
  1. Preheat grill.
  2. Pat steak dry.
  3. Stir together 6 g/1 tsp. of salt, cumin, coriander, and pepper in a small bowl and rub mixture on both sides of steak.
  4. Grill steak on preheated grill, about 4-6 minutes per side for medium-rare.
  5. Transfer to a cutting board and let stand 5 minutes.
  6. Meanwhile, with motor running, add garlic to a food processor and finely chop.
  7. Add cilantro, parsley, vinegar, oil, cayenne, and remaining 3 g/½ tsp. of salt, then pulse until
    herbs are finely chopped.
  8. Using a Kitchen-aid mixer, whip Wholesome Farms until soft and airy, slowly add the chopped herb mixture.
  9. Using a waffle press, press biscuits.
  10. Once the biscuit is cooked, top with BBQ sauce, sliced steak and butter-blend and serve.
  11. Recipe for Jalapeño BBQ Sauce.
    1. Puree all ingredients together.
    2. Let marinate for 12 hours before using.
Cover and refrigerate until ready to use.
