Cut the top and a small amount of bottom off each tomato and using a spoon or melon baller, scoop out insides and discard, leaving just the shell. Toss together orzo, peas, red onion, lemon juice, parsley, chopped artichokes and ½ cup of the reserved artichoke juice, season with pepper.
