Toasted Surimi Salad Rolls with Curry Mango Dressing Courtesy Of: Trident Seafoods Toasted Surimi Salad Rolls with Curry Mango Dressing serves 15 ½ cup mango chutney 1 teaspoon curry powder ½ cup mayonnaise 1 cup celery, diced small ¼ cup red onion, diced small 1 cup carrots, shredded 15 buttered & toasted hoagie rolls 1-2.5 pound package Leg Style Surimi 30 cilantro sprigs 6 cups loosely packed mixed greens In a small bowl, mix together mango chutney, curry powder and mayonnaise. Toss together celery, red onions and carrots. Bruch each roll with butter and toast until golden. Spread 1 Tablespoon of Mango Mayo on each side of the toasted roll. Place 2 legs of Surimi on each roll leaving a space between the two down the middle. Sprinkle ¼ cup vegetable mixture in the space between the Surimi legs to help it stay on the sandwich. Top with two cilantro sprigs and about ½ cup mixed greens. Close sandwich and secure with skewers and slice in half.
