Surimi Stuffed Tomatoes with Citrus Orzo Pea Salad Courtesy Of: Trident Seafoods Surimi Stuffed Tomatoes with Citrus Orzo Pea Salad serves 12 12 vine-ripe tomatoes 8 oz wt. orzo pasta, cooked as per instructions on the box, drained and chilled ½ cup frozen petite peas, defrosted ¼ cup red onion, minced 2 Tablespoons fresh lemon juice ¼ cup Italian flat leaf parsley, chopped ½ cup marinated artichoke hearts chopped and juice reserved 1-2.5 pound package Salad Style Surimi Cut the top and a small amount of bottom off each tomato and using a spoon or melon baller, scoop out insides and discard leaving just the shell.
Toss together orzo, peas, red onion, lemon juice, parsley, chopped artichokes and ½ cup of the reserved artichoke juice and season with pepper. Gently, fold in Surimi and stuff each tomato with about ¼ cup pasta salad.
