Surimi Lettuce Wrap Courtesy Of: Trident Seafoods Corporation Surimi Lettuce Wrap 30 rolls and 2 cups of dressing 2 Tablespoons orange zest ½ cup orange juice 2 Tablespoons lemon zest ¼ cup lemon juice 1 Tablespoon ground coriander ¼ cup honey 1 cup vegetable oil 30 leaves green leaf lettuce 30 avocado slices 30 red pepper slices 60 cilantro sprigs 1-2.5 pound package Leg Style Surimi In a blender, robot coupe or with and hand mixer blend together zests, juices, ground coriander and honey. Slowly incorporate oil.
In the palm of each leaf, vertically to the stem of each leaf, divide avocado slices, peppers slices and cilantro sprigs among the lettuce leaves. Top each leaf with a Surimi Leg and drizzle each with a little dressing. Starting from the stem of each leaf, roll up and secure with a toothpick through the stem. Serve remaining dressing on the side for dipping.
