Surimi & Tortellini Salad with Asparagus & Creamy Herb Dressing Courtesy Of: Trident Seafoods Surimi & Tortellini Salad with Asparagus & Creamy Herb Dressing serves 16 1 pound dried, cheese filled tortellini ½ cup sour cream 1 cup mayonnaise 1/3 cup parsley, chopped 2 Tablespoons fresh dill, chopped ¼ cup fresh lemon juice 2 cups asparagus, blanched & cut in 1-inch pieces 2 cups radish, thinly sliced 2 cups celery, thinly sliced 1/3 cup green onion, sliced 1-2.5 pound package Salad or Flake Style Surimi Cook tortellini as per instructions on package, drain & rinse with cold water to chill.
