Surimi & Cucumber Salad with Sesame Vinaigrette Courtesy Of: Trident Seafoods Surimi & Cucumber Salad with Sesame Vinaigrette serves 12 2 Tablespoons unseasoned rice wine vinegar 1 Tablespoon ginger finely minced 1 Tablespoon honey ½ cup sesame oil 1 Tablespoon lightly toasted black or white sesame seeds ½ cup green onion, sliced on a bias 4 cups English cucumber, diced 1-2.5 pound package Chunk or Leg Style Surimi 12 whole butter lettuce leaves (optional) In a medium bowl, whisk together the first 3 ingredients then slowly whisk in oil and add sesame seeds. Gently toss in green onions, cucumber and Surimi. If serving as a starter salad, wash and arrange whole butter lettuce leaves on each plate and place a mound of crab salad on top of each.
