Baked Surimi Stuffed Pasta Shells Courtesy Of: Trident Seafoods Corporation Baked Surimi Stuffed Pasta Shells 20 servings 1 pound Jumbo Pasta Shells, about 60, cooked and drained as per instructions on box 2 Tablespoons olive oil 2 cups onions, chopped 1 Tablespoon garlic, minced ½ cup white wine ricotta cheese 3 cups ½ cup prepared pesto 2 cups Italian blend cheese, shredded 1-2.5 pound package Shredded Style Surimi 6 cups prepared Alfredo Sauce Preheat oven to 350 °F.
Heat oil in a large sauté pan over medium heat. Add onion and cook for 4-5 minutes, stirring frequently, until translucent. Add garlic and cook 1 additional minute. Add white wine and reduce for 4 minutes until almost dry, remove from heat and allow to cool slightly. Combine together ricotta, pesto and 1 ½ cups Italian blend cheese, reserving remaining ½ cup. Fold in onion mixture, surimi and season to taste with pepper. Stuff shells with mixture.
Pour 1 ½ cups Alfredo in the bottom of 3, 4-inch ½ hotel pans. Place 20 filled shells on top of sauce and pour remaining sauce over shells. Cover with foil and bake in preheated oven for 30 minutes. Remove foil and sprinkle with reserved cheese and broil at 450 °F until tops are slightly browned.
