Pesto Chicken Fajitas Courtesy Of: Olivieri Pesto Chicken Fajitas 1 tbsp ARREZZIO Pesto Supreme or Sundried Tomato Pesto 1 tbsp sour cream 1 Dempster's wrap 2 oz cooked chicken strips 1/2 oz red pepper, julienne, sautéed 1/2 oz onion, julienne, sautéed 1 tsp vegetable oil to taste Salt and pepper 1 oz shredded lettuce 1 oz cheddar cheese, shredded Combine pesto and sour cream. Heat oil in a pan over medium low heat.
Add chicken, peppers and onions; gently toss and heat.
Season to taste. Spread sauce over the surface of wrap. Distribute the chicken, pepper, onion mix evenly over the wrap; about 1 inch from edge of wrap.
Top with shredded lettuce and shredded cheese. Fold in sides 3/4 of an inch and roll into a wrap. For extra avour grill in a panini press (optional).
