Mexican Chopped Salad with a Honey Lime Dressing Courtesy Of: Wing's Mexican Chopped Salad with a Honey Lime Dressing 2 - 4 servings 2 1/2 cups chopped romaine hearts 2 cups canned black beans, rinsed and well drained 3/4 cup chopped seeded tomato 3/4 cup chopped peeled jicama 1/2 sweet onion chopped 1 cup fresh corn kernels, uncooked 3/4 cup thinly sliced radishes 1/2 ripe avocado, diced 1 red bell pepper, chopped 1/4 cup crumbled reduced-fat feta cheese 1/3 cup Jade Mountain Honey Garlic Sauce 1/4 cup fresh lime juice 2 tbsp finely chopped fresh cilantro 1 tsp chopped jalapeño pepper (use canned for less heat) 1. Toss all ingredients in a large bowl.

2. In a separate bowl, mix dressing ingredients together (Jade Mountain Honey Garlic Sauce, lime juice, cilantro and jalapeño pepper).

3. Pour dressing over mixture and toss again.

4. Season with salt and pepper to taste.
