Fancy Fried Sesame Rice with Langostino, Bok Choy & Fresh Vegetables Courtesy Of: Trident Seafoods Corporation – 2008 Fancy Fried Sesame Rice with Langostino, Bok Choy & Fresh Vegetables 12 servings sesame oil,½ cup or 4 fl oz shiitake mushrooms, stems removed and sliced into thin strips,3 cups or 6 oz wt. garlic, minced,1 Tablespoon eggs, scrambled,4 long grain white rice, cooked and cooled* (1 1/2 cup 12 oz uncooked) ,6 cups 2 lbs. frozen peas, thawed,1 cup or 6 oz wt. carrot, diced small,1 cup or 6 oz wt. bok choy, sliced thin,3 cups 6 oz Langostino Meat, defrosted, drained thoroughly ,1 1/2 lb. (18 oz wt. after draining) green onions, sliced thin on a bias,¾ cup or 2 oz wt. white sesame seeds, toasted,1 Tablespoon 1. Heat a wok or heavy skillet over high heat. Add the oil and mushrooms and cook until mushrooms begin to soften, about 2 minutes.
2. Add the garlic and cook and additional 30 seconds.
3. Add the scrambled egg and cook until it just begins to get firm, about 1 ½ -2 minutes.
4. Add the rice, peas, carrot, and the bok choy and cook and additional 2 minutes.
5. Gently fold in the Langostino.
6. Serve rice sprinkled with green onions and sesame seeds.


*To cook rice: Bring 3 cups of water to a boil. Stir in 1 ½ cups rice and reduce heat. Cover and let simmer 20 minutes. Remove from heat and let stand for 5 minutes covered. Fluff with a fork. Transfer the rice to a large bowl and let cool for 10 minutes or more.
