Easy Orange Parfaits Courtesy Of: Florida Citrus Commission Easy Orange Parfaits 6 servings 1 4-serving size package Classic cook-and-serve vanilla pudding mix 1-3/4 cups SYSCO Imperial orange juice 1 8 oz. carton SYSCO Classic vanilla or pineapple low-fat yogurt 3/4 cup (about 10) SYSCO Classic gingersnaps and/or chocolate wafer cookies, coarsely crushed SYSCO Imperial Florida orange peels or wedges (optional) SYSCO Natural fresh mint sprigs (optional) 1. Prepare pudding mix according to package directions, using orange juice instead of milk. Transfer pudding to a bowl. Cover surface with plastic wrap. Chill thoroughly.
2. Before serving, fold yogurt into pudding. Divide 1/3 of the pudding mixture among 6 glasses. Sprinkle with half of the crushed cookies. Repeat pudding and cookie layers. Top with remaining pudding mixture. If desired, garnish with orange peel curls or wedges and mint.
