Wisconsin Brie En Croute Courtesy Of: Wisconsin Milk Marketing Board Wisconsin Brie En Croute 12 servings 1 SYSCO Classic egg 1 17-1/4 oz. SYSCO Classic frozen puff pastry sheets 1 wheel (2lbs.) SYSCO Classic Brie or Camembert cheese 1. Beat egg yolk with 1 Tbp. water.
2. Thaw puff pastry 20 minutes, then unfold.
3. Roll out 1 pastry square until it is approximately 1/2-inch larger than the circle of cheese.
4. Place Brie in center of circle and trim edges, leaving a 1/2-inch border.
5. Brush border with egg mixture.
6. Roll second square of pastry until it is large enough to fit over the cheese, again allowing the 1/2-inch border.
7. Place over the circle of cheese and press circles together to seal.
8. If desired, decorate with cutouts made from pastry scraps (heart-shapes, crescents, twists, etc.) and apply with egg mixture.
9. Brush top only with egg and place on an ungreased cookie sheet in the middle of a preheated 375 degree F. oven.
10. Bake for 20 minutes or until golden brown.
11. Serve warm or at room temperature.
