Asiago Cheese Puffs Courtesy Of: Wisconsin Milk Marketing Asiago Cheese Puffs 24 servings (5 puffs each) 2 oz SYSCO Brand Butter 1/4 cup SYSCO Supreme Extra Virgin olive oil 2 tsp SYSCO Classic salt 1/2 tsp Caynenne pepper 1 Qt. Water 1 Qt. All-purpose flour 16 Imperial eggs 8 oz Each shredded Arrezzio cheese Arrezzio grated parmesan cheese 1. Combine Butter, oil, salt, cayenne and water in saucepan. Bring to boil; stir in flour, and cook, stirring constantly, until mixture forms ball. Continue to cook, stirring over low heat, until mixture dries. Transfer to mixer.
2. Beat dough in mixer, adding eggs slowly as each is absorbed. Mix in cheeses. Drop tablespoons of batter onto greased sheet pans. Bake at 400°F. until browned, about 20 minutes. Serve hot
