Whole Wheat Beef & Vegetable Tortelloni Courtesy Of: Olivieri Foodservice Whole Wheat Beef & Vegetable Tortelloni Serves 1 126 g or 5 oz Olivieri Whole Wheat Beef & Vegetable Tortelloni 125 mL or 1/2 cup Olivieri Chunky Marinara Sauce 25 g or 1 oz Red sweet peppers, raw 75 g or 3 oz Spinach, raw 15 g or 1/2 cup Onions, spring or scallions (includes tops and bulb), raw 8 g or 1/4 oz Parmesan cheese, grated 5 mL or 1 tsp Olive oil Parsley, raw 1. Cook tortelloni according to cooking directions, meanwhile dice red pepper into 1/2” pieces, slice green onions, chop parsley and heat a non-stick pan to medium heat.
2. Add olive oil, sauté red peppers until almost done. Add the green onions and spinach and cook until spinach is wilted.
3. Add chunky marinara sauce and heat until it comes to a simmer.
4. Add cooked pasta and toss, place in serving dish and sprinkle with chopped parsley and Parmesan cheese. Serve.
