Hearty Cod Chowder Courtesy Of: High Liner Foods Hearty Cod Chowder Serves 12 12-113 g portions or 12-4 oz portions Portico cod fillets (or haddock) 50 mL or 1/4 cup Olive oil or butter 750 mL or 3 cups Onions, diced 750 mL or 3 cups Celery, diced 1-1/2 Green bell pepper, diced 1 L or 4 cups Butternut squash, chopped and peeled 6 Small red potatoes, chopped 10 mL or 2 tsp Garlic cloves, minced 15 mL or 1 Tbsp Dried thyme 1.36 kg or 48 oz Clam juice 1.5 L or 6 cups Water 750 mL or 3 cups Canned tomato sauce 7 mL or 1-1/2 tsp Black pepper 125 mL or 1/2 cup Fresh parsley, chopped Salt and pepper, to taste 1. In a very large pot (12 litres or more), heat oil over high heat. Add onions, celery and bell peppers and saute for 5 to 7 minutes or until softened.
2. Stir in squash, potatoes, corn, tomatoes, garlic, and thyme; and cook for 5 to 7 minutes.
3. Stir in clam juice, water, and tomato sauce in vegetable mixture and heat to boil.
4. Reduce heat, add black pepper, cover and simmer for 20 to 25 minutes or until potatoes are tender.
5. Cut fish in 5 centimeter chunks and add to soup. Heat to boiling, then reduce and simmer for 5 minutes or until fish begins to flake. Stir in chopped parsley and season to taste.
