Shrimp & Peach Skewers Courtesy Of: California Cling Peach Board Shrimp & Peach Skewers Serves 8 796 mL or 28 oz Sysco Imperial sliced peaches in light syrup 250 mL or 1 cup Mint or basil leaves, chopped 2 Small jalapeno peppers 50 mL or 1/4 cup Lime juice 30 mL or 2 Tbsp Fish sauce 30 Large shrimp, cooked and peeled Salt and pepper, to taste Medium size skewers 1. Drain peaches in sieve set or bowl. Meanwhile, finly chop herbs and slice jalapenos in half and remove seeds if you don't like your food too spicy. Finely mince jalapenos. Place in a medium bowl along with basil, lime juice, fish sauce and pepper. Stir to combine.
2. Add well drained peaches and shrimp to herb mixture. Stir to coat. Let stand for 30 minutes.
3. Thread onto skewers and lightly sprinkle with salt. 4. Serve at room tempature with marinade spooned over the top or warm over medium grill basting with marinade.
