Tomato Lentil Soup Courtesy Of: Vitality Food Service Tomato Lentil Soup 25 Portions 60 ml or 1/4 cup Olive Oil 750 ml or 3 cups Celery, Finely Chopped 750 ml or 3 cups Onion, Finely Chopped 750 ml or 3 cups Carrots, Finely Chopped 2 L or 8 cups Sysco brand Tomato Juice 500 ml or 2 cups Sunkist Orange Juice 500 ml or 2 cups Water 375 ml or 1 1/2 cups Lentils, Red, Dried 125 ml or 1/2 cup Sour Cream, 2% 60 ml or 1/4 cup Parsley, Chopped Finely 1. In large pot, heat oil over medium-high heat. Add celery, onion and carrots. Sauté for 4 to 6 minutes or until beginning to soften.
2. Add sysco brand tomato juice, Sunkist orange juice, water and lentils to the vegetables. Bring to a boil over high heat. Boil for 10 minutes, stirring frequently. Reduce heat to low and continue to cook for 20 to 30 minutes or until lentils are soft.
3. Place sour cream in a bowl. Add 500 ml (2 cups) of soup to sour cream. Stir and add back into the soup. Add parsley. Continue to simmer until soup is simmer until soup reaches 74° C (165° C).
4. Serve using 175 ml (3/4 cup) ladle.
