Asian Shrimp Soup Courtesy Of: High Liner Foods Asian Shrimp Soup Serves 12-16 1kg or 2 lbs High Liner or Mirabel Shrimp, thawed and cut in half lengthwise 6 Garlic cloves, minced 50 mL or 1/4 cup Fresh gingerroot, minced 30 mL or 2 tbsp Sesame oil 4 L or 16 cups Chicken stock 150 mL or 2/3 cup Cilantro, chopped 500 mL or 2 cups Flat rice noodles, broken in half 350 mL or 1 1/2 cups Snow peas, cut in strips 5 mL or 1 tsp Salt and pepper, cut in strips 4 Green onions, thinly sliced Cilantro leaves, for garnish Sauté garlic and ginger root in sesame oil for 2 minutes, until fragrant.

Add chicken stock and cilantro; bring to a boil. Reduce heat, cover and simmer 10 minutes.

Add rice noodles; simmer 2 minutes.

Stir in shrimp and snow peas; simmer 2 minutes, or until shrimps are pink and the flesh is opaque. Season to taste.

Garnish each serving with green onion and cilantro leaves.
