Marinated Goat Cheese & Tomato Salad Courtesy Of: Sysco Corporation Marinated Goat Cheese & Tomato Salad 24 servings 3 cups Olive oil 1 tbsp. each Sysco/Imperial McCormick fennel seeds and dried basil, crushed To taste Coarsely ground black pepper 1 lb., 8 oz. Goat cheese logs As needed Boston lettuce leaves 12 Sysco Imperial large ripe tomatoes, cut into wedges 1 cup Lemon juice 1/2 cup Sysco Classic honey To taste Salt 1-1/2 cups Sysco Classic chopped pecans or walnuts, toasted Combine oil, fennel, basic and pepper in shallow pan. Cut goat cheese into 1/2 oz. slices; add to oil mixture. Cover pan; marinate at room temperature at least 2 hours.

Line each serving plate with lettuce leaves. Arrange 4 tomato wedges and 1 oz. goat cheese slices over lettuce. Reserve cheese marinade.

When ready to serve, heat lemon juice with honey until liquefied. Whisk into reserved marinade; season with salt. Drizzle dressing over each salad. Garnish with toasted nuts.
