Tortellini Soup Courtesy Of: Canada Bread Tortellini Soup 4 Servings 1 kg or 2 lbs Arrezzio Beef or Cheese Tortellini 180 mL or 6 oz Olive oil 1 Small cabbage, thinly sliced 300 g or 12 oz Carrot, finely chopped 300 g or 12 oz Celery, finely chopped 680 g or 1 1/2 lbs Onion, finely chopped 1 kg or 2 lbs Green beans, frozen cut 10 L or 10 qt Chicken or beef broth 150 g or 6 oz Parmesan Cheese 1 bunch Parsley, fresh chopped In a large saucepan, heat oil over medium heat. Add cabbage, carrot, celery, onion and green beans.

Cook for 5 minutes or until tender.

Stir in broth and bring to boil.

Add tortellini and cook for 10 minutes.

Add parsley and serve with Parmesan cheese.

For extra protein add 1 cup of diced cooked chicken and substitute cabbage with fresh spinach.
