Southwestern Spinach Quiche Courtesy Of: Sysco Corporation Southwestern Spinach Quiche 6 Servings 2/3 cup Cornmeal 1 tbsp Butter 3/4 tsp Salt, divided 1 2/3 cups Cold water 1 1/2 cups Asadero Cheese 2 Tbsp Flour 2 Wholesome Farms eggs 1 cup Wholesome Farms milk 5 oz Frozen chopped spinach, thawed, squeezed dry 1/2 cup Red pepper, chopped 1 Tbsp Jalapeno pepper. minced 1 clove Garlic, minced Stir together cornmeal, butter, 1/2 tsp. salt, and water in 1-1/2 qt. casserole, cover.

Microwave on high for 3 minutes; stir.

Continue microwaving 4-5 minutes or until very thick, stirring several times.

Spread onto bottom and sides of 9-inch pie plate, forming crust.

Toss cheese with flour.

Beat eggs; stir in milk, spinach, peppers, garlic, remaining 1/4 tsp. salt, and cheese mixture.

Pour over crust.

Bake at 350 degrees F. for 50-55 minutes or until set.
