Marinated Calamari Salad Courtesy Of: Sysco Corporation Marinated Calamari Salad 24 3 cups each Dry white wine and water 4 lbs. 8 oz. Sysco Simply calamari rings and tentacles 1-1/2 qts. Chopped Sysco Imperial bell peppers 3 cups each chopped Sysco Imperial celery. Cucumber, jicama 2 cups Chopped Sysco Imperial green onions 3/4 cup each Chopped Sysco Natural cilantro and parsley 3 Sysco Natural jalapeno chiles, seeded, finely chopped 3/4 cup Sysco Natural fresh lemon or lime juice 1-1/2 cups Arrezzio olive oil 3/4 cup Red wine vinegar 6 Sysco Natural garlic cloves, pressed 1. Bring wine and water to simmer in pot. Add calamari and cook just until opaque, about 2 minutes. Drain; cool.
2. Add drained calamari to bell peppers, celery, cucumber, jicama, onions, herbs, chiles and lemon juice. Toss to mix.
3. Combine oil, vinegar and garlic; add to calamari mixture. Toss to mix thoroughly. Refrigerate until ready to serve. Portion 1 cup salad for each serving.
