Grilled Vegetables Courtesy Of: Sysco Corporation Grilled Vegetables 8 Ingredients: 1 small Sysco Imperial purple onion 2 small Sysco Imperial zucchini 2 small Sysco Imperial summer squash 2 small Sysco Imperial eggplant 1 Sysco Imperial red pepper As needed Arrezzio olive oil, As needed Sysco Imperial balsamic vinegar, Preparation:
1. Cut onion into 8 wedges. Cut zucchini, summer squash and eggplant lengthwise twice to obtain 4 wedges per vegetable. Cut red pepper lengthwise into 8 strips. Marinate on olive oil and balsamic vinegar for at least 30 minutes. Grill over medium-high heat, first one side than the other, being careful not to burn. When both sides are charred and somewhat soft to the touch, the vegetables are done.
