Sweet & Spicy Pork Courtesy Of: Sysco Corporation Sweet & Spicy Pork 24 1 lb. Sysco Classic pure honey 8 oz. Sysco Classic sugar 8 oz. Brandy 2 tbsp., 1-1/2 tsp Dried red chilies 6 oz. Prepared teriyaki sauce 4 oz. Red wine vinegar 2 tsp. Hot Sauce 16 oz. Sysco Natural orange juice 1/2 bunch each Sysco Natural fresh basil, chives, cilantro, dill, and thyme 3 cloves Sysco Imperial garlic 12 lbs. Sysco Classic pork loin, boned 2 oz. Canola vegetable oil to taste Sysco Classic salt, Sysco Imperial/McCormick pepper 6 oz. Water 1. In a hot sauce pot, combine first four ingredients. Bring to boil and add teriyaki sauce, vinegar and hot pepper sauce. Stir and simmer 5 minutes. Add orange juice; cool 25 minutes or longer stirring frequently. Set aside.
2. Chop all herbs and garlic and combine in a 12 x 20 x 2-inch pan.
3. Make 1-inch-deep cuts into pork loin from one end to other and stuff with chopped herbs. Tie with string at 2-inch intervals. Roll in marinade to coat all sides.
4. In same pan containing herbs, combine oil, salt and pepper. Heat pan and sear roast on all sides until lightly browned.
5. Brush roast with marinade. Roll in liquid in pan; add water and cover with foil.
6. Roast at 325 degrees F for 15 minutes. Remove foil and brush with additional marinade. Roast 35 to 45 minutes longer or until pork reaches 145 degrees F in the center and 160 degrees F at each end.
7. Strain sauce and serve with roast.
