Sauteed Alaska Cod with Carmelized Onion Courtesy Of: Sysco Corporation Sauteed Alaska Cod with Carmelized Onion 24 20 Spanish Onions, large, sliced 2 qt. Red wine CARAMELIZED ONIONS: 2 qt. Red wine vinegar to taste Sysco Imperial/McCormick salt and pepper 1 qt. Sysco Classic honey 1 1/2 c. Sysco Imperial butter or margerine 1 1/2 c. Fresh Thyme or Marjoram, chopped FISH: 24 (6 oz. ea.) Portico Simply Alaska Cod fillets 3/4 c. Arrezzio Olive oil as needed Sysco Imperial/McCormick salt and pepper blend 1. Caramelize onions: In large spray-coated or non-stick stockpot, saute onions in wine and wine vinegar. Reduce sauce until liquid evaporates, stirring occassionally.
2. Stir in honey and cook over medium heat until caramelized, about 5 minutes; remove from heat. Stir in butter and thyme; heat through. Keep warm until serving.
3. For each serving, heat 1/2 Tbsp. oil in non-stick skillet. Season 1 fillet with salt and pepper blend; saute in oil until done. Serve with 1 cup onions.
