Quick Red Beans & Rice Courtesy Of: Sysco Corporation Quick Red Beans & Rice 24 servings 2 lbs. Sysco Classic dry kidney beans, cleaned 1 lb. Block & Barrel diced ham, tasso or Cajun spiced 12 oz. Sysco Imperial diced onions 4 oz. Sysco Imperial green bell pepper, diced 2 oz. Sysco Imperial green onion, chopped 1 tbsp. Sysco Classic minced garlic 2 tbsp. Sysco Imperial chopped parsley 1/2 tsp. Sysco Imperial ground black pepper 1/2 tsp. Sysco Imperial thyme, dried 1/4 tsp. Sysco Imperial basil, dried 2 Sysco Imperial/McCormick bay leaves 1/8 tsp. each Sysco Imperial Cayenne pepper, Sysco Imperial crushed red pepper 1 gal. water to taste Sysco Classic salt, 1 lb. Sysco Classic long-grain white rice 1. Combine dry beans with ham, onions, bell pepper, green onion, garlic, herbs, cayenne, red pepper and water in large pot. Stir to mix thoroughly. Bring mixture to boil; lower heat to bare simmer. Cook 1-1/2 to 2 hours until beans test tender.
2. Remove pot from heat; let mixture cool in cooking liquid. Season to taste with salt.
3. Cook rice in simmering water until tender; drain. Portion 1/2 cup heated bean mixture with 1/4 cup hot, cooked rice for each serving.
