Sysco Classic unsweetened chocolate, melted 2/3 cup Sysco Imperial dried plum purée 8 Sysco egg whites 2-1/2 cups Sysco sugar 3-1/2 Tbsp. Arrezzio instant espresso granules 2-1/2 tsp. Sysco baking powder 2 tsp. Sysco Imperial/McCormick salt 1-1/4 cups Sysco flour as needed Sysco powdered sugar, optional Thoroughly beat chocolate, dried plum purée, egg whites, sugar, coffee granules, baking powder and salt. Fold in flour. Spread batter into a greased 12x20 pan. Bake at 325ºF. until a toothpick inserted in the center comes out clean, about 30 minutes. Cool; dust with powdered sugar.
