Masaman Chicken Curry Courtesy Of: Sysco Corporation Masaman Chicken Curry 24 servings, 1-1/4 cup each 3 qts. Unsweetened coconut cream or Wholesome Farms milk 6 lbs. Sysco Classic boneless chicken, large pieces 4 lbs. 8 oz. Potatoes, peeled, large chunks 1 lb. 8 oz. Onions, large chunks 6 oz. Raw peanuts 2 tbsp. Sysco Classic salt 2/3 cup Thai red curry paste 2/3 cup Thai fish sauce 3 tbsp. Tamarind juice 3 tbsp. Sysco Classic granulated sugar 1. Bring coconut cream to boil in large pot. Add next five ingredients. Reduce heat to low; simmer 20 minutes.
2. Remove 2 cups of the coconut cream from pot; transfer to skillet. Stir in curry paste; heat until mixture boils and thickens. Return mixture to pot with chicken and vegetables.
3. Add fish sauce, tamarind juice and sugar to pot. Stir to mix; simmer mixture 15 minutes until potatoes test tender.
