Cajun - Style Baked Fillets Courtesy Of: High Liner Foodservice Cajun - Style Baked Fillets 12 Servings 12 – 140 g or 5 oz portions Tilapia, thawed 50 mL or ¼ cup Vegetable oil 375 mL or 1 ½ cups Onions chopped 375 mL or 1 ½ cups Celery chopped 375 mL or 1 ½ cups Green pepper chopped 375 mL or 1 ½ cups Mushrooms, sliced 4 Garlic cloves, minced 1.5 L or 6 cups Canned diced tomatoes, undrained 175 mL or ¾ cup Black olives, sliced (optional) 50 mL or ¼ cup Cajun seasoning 175 mL or ¾ cup Cheddar cheese, shredded Salt and pepper, to taste Arrange fillets in a single layer on a greased baking pan; season, cover and refrigerate.

Heat oil in a large pan; sauté onion, celery, green pepper, mushrooms and garlic until tender, stirring frequently.

Add tomatoes, olives and Cajun seasoning. Simmer 20 minutes.

Pour vegetable mixture over fish; sprinkle with cheese. Bake uncovered at 200°C (400°F) for 15 minutes, or until fish is done.

May substitute Patagonian Silver Hake Fillets or Cod Tails.
