East Meets West Sweet & Sour Stir-Fry Courtesy Of: Pacific Northwest Canned Pear Service East Meets West Sweet & Sour Stir-Fry 50 servings (3/4 turkey mixture + 1/2 cup rice) 3 lbs Uncooked rice 10 lbs Pacific Northwest Canned Pear Slices, liquid reserved 1 quart or 4 cups Cider vinegar 1/2 cup Tomato paste 1/2 cup Soy sauce 1 cup Brown sugar 1 teaspoon Powdered ginger (optional) 2/3 cup Vegetable oil 8 lbs Chicken or turkey breasts, cut into 1/8 4 teaspoons Garlic powder 4 teaspoons Salt 2 teaspoons Pepper 3 quarts or 12 cups Cut green beans, canned, drained 3 tablespoons Cornstarch 6 tablespoons Water 50 Tortillas or lettuce leaves Cook rice as package directs. Keep warm.

Drain pears, reserve liquid.

In saucepan, mix reserved liquid, vinegar, tomato paste, soy sauce, brown sugar and ginger. Simmer until mixture has thickened slightly; reserve.

Heat oil until hot. Add turkey, garlic powder, salt and pepper. Reduce heat to medium, cook mixture thoroughly, stirring frequently.

Stir in beans, pears and reserved sauce. Simmer just until heated through.

Mix cornstarch and water together. Add to pan and cook, stirring constantly, until thickened. Remove from heat. (Note: 6 cups of prepared sweet and sour sauce may be used instead of reserved sauce and cornstarch mixture).

Portion 3/4 cup turkey-pear mixture over 1/2 cup cooked rice. Serve with 1 tortilla or 1 lettuce leaf for each serving as a wrap.
