Pear and Cherry Clafouti Courtesy Of: The Pacific Northwest Canned Pear Service Pear and Cherry Clafouti 24 1-1/2 cups or 375 mL Dried cherries 1 lb or 16 ounces Pacific Northwest Canned Pear Slices, drained 9 Eggs 3-3/4 cups or 925 mL Milk 1 cup or 250 mL Sugar 3/4 cup or 175 mL Flour 2 tablespoons or 30 mL Vanilla extract 1 teaspoon or 5 mL Ground nutmeg 1 teaspoon or 5 mL Salt As needed Powdered sugar (optional) As needed Whipped cream (optional) Soak cherries in hot water for 10 minutes; drain.

Arrange cherries and pears in a single layer in a well-buttered 12" x 20" x 2" pan. Reserve.

Beat eggs; beat in milk, sugar, flour, vanilla, nutmeg and salt.

Pour mixture over fruit in reserved pan.

Bake at 350ºF until golden brown and a knife inserted in the center comes out clean.

Cool until just warm; cut into 24 pieces, about 3" x 3".

Keep warm in a counter pan or cool and reheat per order.

Top each serving with powdered sugar and a dollop of whipped cream.
