Shrimp Avocado Salad Courtesy Of: Sysco Corporation Shrimp Avocado Salad 12 60 Cooked, peeled, deveined extra-large shrimp 6 Avocados, peeled and cut into 1.25 cm (1/2") slices 375 mL or 1 1/2 cup Mayonnaise 175 mL or 3/4 cups Chili sauce 50 mL or 1/4 cup Dijon mustard 75 mL or 1/3 cup Fresh lemon juice 30 mL or 2 tbsp Grated lemon peel 6 L or 24 cups Mixed baby greens 250 mL or 1 cup Green onions, finely chopped Salt and pepper to taste Whisk mayonnaise, chili sauce, mustard, lemon juice and lemon peel in small bowl to blend. Season with salt and pepper.

Arrange 500 mL (2 cups) greens on each plate. Top each with half a sliced avocado and 5 shrimp.

Over each plate, spoon 50 mL (1/4 cup) dressing and sprinkle 20 mL (4 tsp) green onion.
