Great Wall of Ribs Courtesy Of: The Ontario Pork Producers Great Wall of Ribs Serves 5-6 2.2 kg or 5 lb Sysco Side or Back Ribs 45 mL or 3 Tbsp Black peppercorns 15 mL or 1 Tbsp Red pepper flakes 6 Bay leaves 25 mL or 2 Tbsp Dried thyme Place ribs with peppercorns, pepper flakes, bay leaves and thyme in a large pot; cover with water. Bring to a boil. Reduce heat, and simmer, uncovered, 45 minutes.

Remove from water, drain, and cool. Ribs can be kept, covered and refrigerated, for up to 3 days. Grill over medium low, basting with a favourite barbecue sauce for the last 15 minutes of cooking.
