Almond Apricot Chardonnay Sorbet Courtesy Of: Sysco Grocery Almond Apricot Chardonnay Sorbet Serves 4-6 1.5 L or 6 cups Canned apricots, drained 500 mL or 2 cups Slivered almonds 10 mL or 2 tsp Real vanilla extract 2 Cinnamon sticks 1 L or 4 cups Chardonnay Spread almonds on a sheet pan and toast in a 300 degree F (150 degree C) oven. Shake/stir until lightly browned. Let cool on sheet pan.

Puree almonds and blend with apricots, chardonnay and extract. Bring to a boil, add cinnamon sticks and lightly simmer for 20 minutes. Remove cinnamon sticks and pour into a large shallow pan to freeze.

To serve, scoop frozen mix into blender or mixer and process until just smooth.
