Nachos salsa de queso Courtesy Of: The Dairy Farmers of Canada Nachos salsa de queso Serves 6 300 g or 2/3 lb Corn nachos 75 mL or 1/3 cup Jalapeno peppers, chopped (optional) 75 mL or 1/3 cup Chopped vegetables (tomatoes, cucumbers, lettuce) Cheese and Tomato Salsa 75 mL or 1/3 cup All purpose flour 50 mL or 1/4 cup Butter 250 mL or 1 cup Grated medium Canadian cheddar cheese 3 mL or 3/4 tsp Salt 1 mL or 1/4 tsp Pepper 2 mL or 1/2 tsp Garlic powder 2 mL or 1/2 tsp Oregano 250 mL or 1 cup Canned crushed tomatoes 750 mL or 3 cups Water In saucepan, cook flour in butter while stirring until golden. Turn off heat and let cool for five minutes. Add cheddar cheese and remaining ingredients. Mix well and cook over medium heat until salsa thickens. Remove salsa from heat and let cool. Refrigerate in airtight container.

Preheat oven to 350 degrees F or 180 degrees C.

Place nachos on large platter and top with cheese and tomato salsa. Bake for 10 minutes (can also be grilled under the broiler for the last two minutes) Remove from oven and garnish with chopped peppers and chopped vegetables. Serve with guacamole and/or sour cream.
