Mexican Jumping Bean & Cheddar Burrito Courtesy Of: The Dairy Farmers of Canada Mexican Jumping Bean & Cheddar Burrito Serves 8 600 mL or 2 2/3 cups Drained red kidney beans or beans in tomato sauce 240 mL or 1 cup Chunky salsa 120 mL or 8 Tbsp Chopped green pepper 8 Large flour tortilla 240 mL or 1 cup Chopped cooked chicken or beef 240 mL or 1 cup Shredded lettuce 400 mL or 2 cups Shredded Canadian Monterey Jack cheese Mash beans, stir in salsa and green pepper. Spoon 1/3 (75 mL) bean mixture onto centre of each tortilla, spread out. Top each tortilla with 2 Tbsp (30 mL) chicken or beef, 2 Tbsp (30 mL) lettuce and 1/4 cup (50 mL) shredded Monterey Jack cheese. Fold both sides of each tortilla over filling, fold bottom edge toward centre and roll up.
