Firecracker Salsa Courtesy Of: The Cherry Marketing Institute Firecracker Salsa Serves 6-8 125 mL or 1/2 cup Dried tart cherries 125 mL or 1/2 cup Cherry preserves 30 mL or 2 Tbsp Red wine vinegar 125 mL or 1/2 cup Red onion, chopped 125 mL or 1/2 cup Yellow bell pepper, chopped 50 mL or 1/4 cup Jalapeno peppers, chopped 15-30 mL or 1-2 Tbsp Fresh cilantro, chopped 5 mL or 1 tsp Lime or lemon juice Combine dried cherries, preserves, and vinegar in a small microwave-safe bowl; mix well. Microwave on high for 1-2 minutes, or until hot. Let stand 5 minutes.

Stir in red onion, yellow bell pepper, jalapeno peppers, cilantro and lime juice. Refrigerate, covered, 3 to 4 hours or overnight. Serve with grilled swordfish or tuna, or as a topping for hamburgers.

Yield: 375 mL or 1 1/2 cups, enough for 6 to 8 servigns with a main course.
