Prosciutto & Mint Pork Tenderloin Wraps Courtesy Of: The Dairy Farmers Of Canada Prosciutto & Mint Pork Tenderloin Wraps Serves 4 2 Pork tenderloins, trimmed of fat to taste Freshly ground pepper to taste hot mustard Fresh mint leaves 8-12 Large prosciutto slices of even thickness Creamy Shallot Sauce 250 mL or 1 cup Plain yogurt 3 green onions, finely chopped 15 mL or 1 Tbsp Juice of one lemon 5 mL or 1 tsp Dijon Mustard 2 mL or 1/2 tsp Seasoned salt Cut pork tenderloins in two. Pepper pork generously and rub in lightly with hands. Brush with hot mustard and set aside.

On work surface, overlap two prosciutto slices, cover with mint leaves and add half pork tenderloin on top. Wrap meat tightly with prosciutto. Repeat process three times with remaining ingredients.

Cook pork wraps on barbecue grill over medium heat for about 15 minutes, turning a few times. Slice and serve over bed of wild rice with Creamy Shallot Sauce. Serve with steamed broccoli.
