Marinated Goat Cheese Courtesy Of: Norseland Marinated Goat Cheese Serves 4 120 g or 4 oz Goat Cheese 1/2 Imperial/McCormick bay leaf 2 mL or 1/2 tsp Imperial/McCormick thyme 2 mL or 1/2 tsp Imperial/McCormick rosemary 1 clove Clove Sysco Natural garlic, diced to taste Imperial/McCormick ground black pepper 60 mL or 4 Tbsp Cognac 125 mL or 1/2 cup Dry white wine 125 mL or 1/2 cup Extra virgin olive oil 1/2 Sysco Natural red onion, thinly sliced Form the goat cheese into a log and slice into eight rounds.

Combine the onion, bay leaf, thyme, rosemary, garlic, pepper, cognac and wine in a saucepan and bring to a boil. Lower the heat to reduce the mixture to a syrup. Add olive oil and swirl to mix.

Pour the mixture over the goat cheese and serve at room temperature.
