Swiss Scalloped Potatoes Courtesy Of: Sysco Corporation Swiss Scalloped Potatoes Serves 100 1 L or 4 cups Butter flavoured oil 30 mL or 2 Tbsp Sugar 1.02 kg carton or 1 gallon carton Sysco Classic Casserole Scalloped Potatoes with 2 seasoning packages 5.5 L or 20 cups Boiling water 125 mL or 1/2 cup Unsalted butter 60 mL or 4 Tbsp Cream-style Horseradish sauce 30 mL or 2 Tbsp Caraway seeds 10 mL or 2 tsp Salt 1 L or 4 cups Shredded swiss cheese Thinly sliced Vidalia onions 125 mL or 1/2 cup Pre-heat oven to 350 degrees F or 180 degrees C. In saute pan heat oil, add onions, and sugar. Saute until onions are caramelized and tender. Set aside.

In full size steam table pan, combine boiling water with 2 seasoning packets and butter; whisk well to blend. Add reserved onions, potato slices and next 4 ingredients; mix thoroughly.

Bake, uncovered, for 35 to 40 minutes. Remove from oven, top with cheese; bake for additional 10 minutes or until cheese is melted and bubbly.
