Atlantic Salmon with Nutmeg Side Stuffing Courtesy Of: High Liner Food Foodservice Atlantic Salmon with Nutmeg Side Stuffing Serves 24 24 (250g) or 24 (8oz) High Liner Atlantic Salmon Fillets 200 mL or 3/4 cup Unsalted butter or margarine 4 Green onions, chopped 500 mL or 2 cups Coarsely grated carrots 750 mL or 3 cups Cooked brown rice 25 mL or 2 Tbsp Lemon rind 25 mL or 2 Tbsp Lemon juice 7 mL or 1.5 tsp Ground nutmeg 10 mL or 2 tsp Black pepper 5 mL or 1 tsp Salt Sauce 25 mL or 2 Tbsp Butter or margarine 75 mL or 1/3 cup Flour 1.25 L or 5 cups Low sodium chicken broth 5 mL or 1 tsp Pepper 250 mL or 1 cup White wine 50 mL or 1.4 cups Minced parsley Stuffing:

Melt 1/2 of the butter over medium heat, add green onions and carrots, cook until tender, 3-5 minutes.

Stir in rice and half of lemon rind and juice, nutmeg and pepper, add salt, set aside and keep chilled.

Sauce and Salmon

Melt remaining butter, blend in flour, cook, stirring 3-5 minutes.

Add chicken broth, remaining lemon rind, juice, nutmeg and pepper.
Cook, stirring constantly until thick. Chill.

Cook frozen High Liner Atlantic Salmon in 200 degree C, (400 degree F) oven for 20-22 minutes.

Before serving, reheat sauce and pour on cooked salmon and stuffing.
