Roast Salmon with Tarragon & Fennel Courtesy Of: Unilever Bestfoods Foodservice Roast Salmon with Tarragon & Fennel Serves 4 4 Salmon filets 10 mL or 2 tsp Dried tarragon 2 mL or 1/2 tsp Toasted, crushed fennel seed 5 mL or 1 tsp Fresh lemon juice 0.5 mL or 1/8 tsp Each, salt and ground black pepper 30 mL Becel margarine Preheat oven to 425 degrees F (220 degrees C). Lightly spray an 11 by 17 inch (28 by 17 cm) baking dish. Place salmon filets in baking dish and season lightly with salt and cracked black pepper. Bake until fish flakes easily (about 10 minutes per 1-inch (2.5 cm) thickness of fish filet) and internal temperature reaches 160 degrees F (70 degrees C)

Meanwhile in a small bowl mix together Becel margarine, tarragon, fennel seed and lemon juice. Spread sauce over salmon, and serve at once.
