Roasted Fruit Courtesy Of: Unilever Bestfoods Foodservice Roasted Fruit Serves 2 1 Ripe peach or pear, pitted an cut into eighths 1 Ripe purple plum, pitted and cut into eighths 45 mL or 3 Tbsp Light brown sugar, firmly packed 2 mL or 1/2 tsp Ground cinnamon 2 mL or 1/2 tsp Ground nutmeg 5 mL or 1 tsp Vanilla extract 5 mL or 1 tsp Becel margarine 50 mL or 1/4 tcup Low fat vanilla yogurt Place fruit in a greased 11 x 17 inch (2 L ) baking dish.

In a small bowl, combine sugar, cinnamon, and nutmeg; sprinkle over fruit. Drizzle with vanilla exract and dot with margarine. Toss.

Bake for 10 to 15 minutes or until sugar starts to caramelize and fruit begins to brown. Turn fruit halfway during cooking time. Serve warm. Drizzle with yogurt if desired.
